In the flower bud of Sophora japonica l., the content can reach more than 20%, which is the main raw material for the extraction of rutin from the pharmaceutical industry in China. Rutin can be decomposed by strong acidity and alkalinity. The color is unstable in alkaline food and has the antioxidant capacity. In ethanol, it can improve the light resistance of pigment, prevent the gradual disappearance or change of fragrance, and improve its antioxidant capacity with vitamin E.
