Potassium Lactate is a transparent colorless or slightly yellowish viscous
clarified liquid with no odor or slightly peculiar odor. It can be fused with water,
ethanol and glycerol. The concentration range in the solution is about 50% to 70%.
Potassium lactate can be used as flavoring agent, emulsifier, humectant,
pH adjuster, flavor enhancer, antioxidant synergist, buffering agent for food.
It is mostly used in meat products for preservation, moisturizing,
aroma enhancement and pharmaceutical raw materials.
It has good effect in jam, jelly, orange peel jelly and ice cream.
