Vitamin B12, also known as cobalamin, is the only vitamin containing metallic elements. Vitamin B12 is synthesized by microorganisms in nature. Higher plants and animals cannot produce vitamin B12. Vitamin B12 is the only vitamin that needs the help of an intestinal secretion (endogenous factor) to be absorbed. Some people, due to gastrointestinal abnormalities, lack this endogenous factor, even if the diet is adequately sourced, will suffer from pernicious anemia. There is basically no vitamin B12 in vegetable foods. It stays in the intestine for a long time and takes about three hours (most water-soluble vitamins take only a few seconds) to be absorbed. The main physiological function of vitamin B12 is to participate in the production of bone marrow red blood cells, prevent pernicious anemia, and prevent brain nerve damage. Vitamin B12 is the latest B vitamin found so far. Vitamin B12 is a polycyclic compound containing cobalt trivalent. Four reduced pyrrole rings are linked together to form a macrocyclic compound (similar to porphyrin), which is the core of vitamin B12 molecule. So compounds containing these rings are called guolinoid-like compounds. Vitamin B12 is a light red acicular crystal, soluble in water and ethanol. It is the most stable under the weak acid condition of pH 4.5-5.0. It can be decomposed in strong acid (pH < 2) or alkaline solution. It can be destroyed to a certain extent when heated, but the loss of high temperature disinfection in a short time is small, and it is easy to be destroyed by strong light or ultraviolet rays. The loss of ordinary cooking process is about 30%.
