DescriptionIn medicine, glutamate is mainly used to treat hepatic coma and also to improve children's intellectual development. In the food industry, monosodium glutamate is a commonly used food freshener, and its main ingredient is sodium glutamate. In the past, the production of MSG was mainly carried out by the hydrolysis method of wheat gluten (gluten), but now it uses the microbial fermentation method for large-scale production. L-glutamic acid is mainly used in the production of monosodium glutamate, spices, as well as salt substitutes, nutritional supplements and biochemical reagents. Glutamic acid is an acidic amino acid. The molecule contains two carboxyl groups, and the chemical name is α-aminoglutaric acid. Glutamic acid was discovered in 1856 by Rixosson. It is a colorless crystal with an umami taste. It is slightly soluble in water but soluble in  solution with an isoelectric point of 3.22. It exists in a large amount in cereal protein, and the content in animal brain is also higher. Glutamate occupies an important position in the process of protein metabolism in organisms, and participates in many important chemical reactions in animals, plants and microorganisms.
