Product description
The most widely distributed non-reductive disaccharides in nature. Sucrose is made up of a molecule of glucose and a molecule of fructose that condenses to lose a molecule of water, in glucose molecules in aldehyde and fructose molecules. The ketones are broken, so they are not reductive and are non-reductive disaccharides. Sucrose is hydrolyzed to produce the same amount under the action of acid or sucrose enzymes glucose and fructose. Therefore, its hydrolysis products are reductive.

Chemical properties

Sucrose and sucrose solution in the role of heat, acid, alkali, yeast, etc will produce a variety of different chemical reactions. The result of the reaction is not only a direct loss of sucrose, but also the production of some substances harmful to sugar production. The crystalline sucrose is heated to 160 degrees C, the thermal decomposition melts into a thick transparent liquid, and recrystallines when cooled. When the heating time is extended, the sucrose is broken down into glucose and de-fruit sugar. At a higher temperature of 190-220 degrees C, sucrose is dehydrated and condenses into caramel. Further heating of caramel produces products such as carbon dioxide, acetic acid. Under humid conditions, sucrose breaks down at 100 degrees C, releasing moisture and turning black. The sucrose solution is heated and boiled for a long time under normal pressure, and the dissolved sucrose slowly decomposes into the same amount of glucose and fructose, it undergoes a transformational effect. If the sucrose solution is heated to more than 108 degrees C, the hydrolysis is rapid, the greater the concentration of the sugar solution, the more significant the hydrolysis. The metal material used in boiling containers also has an effect on the rate of sucrose conversion. For example, the conversion of sucrose solution in copper is much larger than in silverware, and glass containers have little effect.
