Also known as citrate, trisodium citrate. This product is white cubic crystal system crystallization or granular powder, odorless, cool, salty and slightly spicy. In 1.5ml water, 1g (25ºC) can be dissolved, insoluble in ethanol, stable in air, Na3C6H5O7·5H2O (pentahydrate) loses crystal water at 1450ºC and becomes anhydrous, and decompounds when it is hotter. No melting point, no boiling point. The rats were intraperitoneally injected with LD501549mg/kg. It can be used as acidity regulator, buffer, emulsifier and stabilizer.
