Ethyl decanoate has the aroma of coconut and is mainly used in the preparation of edible flavor. Similar to this product, ethyl aliphatic carboxylic acid, such as ethyl octanoate, ethyl nonanoate and ethyl laurate are also used as spices. Sometimes commercial ethyl laurate is a mixed ester. Octanoic acid (C8), decanoic acid (C10), lauric acid (C12), myristic acid (C14) and palmitoic acid (C16) were found in coconut oil in the form of glycerol, with the content of laurate glycerol being 45-51%. In the presence of sulfuric acid, ethyl laurate can be obtained by transesterification reaction between ethanol and coconut oleate.
