Glucono Delta Lactone GDL Description

 
 
White crystal or crystalline powder, odorless, taste sweet first and then bitter,
showing sour taste. Melting point 150~152ºC (decomposition).
It is easily soluble in water (room temperature, 60g/100mL),
slightly soluble in ethanol (1g/100mL), and insoluble in ether.

Introduction

Glucono-Delta-Lactone (GDL), a white crystalline powder,
is a neutral cyclicester of gluconic acid. The acid is produced by
an aerobic fermentation of a carbohydrate source.
After fermentation it is purified and crystallised into Gdl.
GDL is an acidifying agent that enables progressive acidification,
unlike other food acids.
