Traits: brown powder. Extracted by Bacillus subtilis, soluble in water and dilute buffer, almost insoluble in ethanol. Enzyme reaction: starch (soluble) + nH2O = n maltose + dextrin. The optimum pH is 4.0 to 5.0. The optimum temperature is 50 ~ 55 ºC. Isoelectric point (pI) 4.77. Absorption coefficient (E1% 280) 12.3. Inhibitors include cyclohexyl-amylose, methyl-α-glucoside, thiol reagent (4-chloromercuric acid, iodoacetamide), heavy metal ions (Cu2 +, HG2)
Uses: biochemical research. Capable of breaking down amylose into maltose. The combination of trans-glucanase and isomalto-oligosaccharide (IMO50, IMO90) is better than fungal enzymes. Combined with pullulanase to produce ultra-high maltose
