Sodium cyclamate is a white crystalline powder; it is odorless and has a sweet taste. It is easily soluble in water, very slightly soluble in ethanol, and insoluble in ether and chloroform. It can be used for medicinal excipients and flavoring agents.
Molecular formula C6H12NNaO3S, molecular weight 201.2. White crystal or white crystalline powder, odorless, sweet in taste, easily soluble in water, insoluble in ethanol, insoluble in chloroform and ether. It decomposes slightly under acidic conditions and is stable under alkaline conditions. [2] It is a non-nutritive sweetener, with a bitter taste when the concentration is greater than 0.4%. The oral median lethal dose for mice is 18g/kg, and FAO/WHO (1982) stipulates that the daily allowable intake is 0-11mg/kg. [3] In 1969, rats fed with saccharin-sodium cyclamate were found to have bladder cancer, so the United States and Japan successively banned the use in 1970. In subsequent studies, no carcinogenic effects of this product were found [4]. Human oral sodium cyclohexyl sulfamate, 40% is excreted in urine, 60% is excreted in feces, no accumulation. my country's "Hygienic Standards for the Use of Food Additives" (GB 2760-2014) imposes strict restrictions on the amount of sodium cyclamate in food processing.

The sweetness of cyclamate is slower, but it lasts for a long time, and the sweetness is relatively pure. It can be used instead of sucrose or mixed with sucrose. Cyclamate can also be mixed with saccharin to mask the bad taste of saccharin. When the ratio of cyclamate to saccharin is 10:1, the flavor effect of the product is better. The advantage of cyclamate is that it has better sweetness, lower bitterness than saccharin, and lower cost; the disadvantage is that the sweetness is not high, the dosage is large, and it is easy to exceed the standard.
