Processing technology
Maltodextrin can be produced by acid method, acid enzyme method and enzyme method. Among them, acid filtration is difficult, the solubility of the product is poor, and the effect of acid enzyme method is good, but it is not suitable to directly use starch raw materials (such as corn and potato), and enzyme process is the most suitable. The production processes are: starch to paste, first liquefaction, high temperature, enzyme, second times liquefaction, enzyme decolorization, filtration, ion exchange, concentration, spray drying, and product. The key points of the process are as follows:

(1) Starch sizing and gelatinization due to the strong resistance of the crystalline structure of starch particles to the action of enzymes, the enzymes can not act directly on the starch, so first adjust the starch into 30-32% starch milk with hot water, and make it fully absorb water, expand and gelatinize. At the same time, adjust the pH value to 6.2-6.4 and add 0.5-1.0% calcium chloride to improve the heat resistance of amylase.

(2) Conversion (liquefaction) is the key process for the production of maltodextrin, because maltodextrin is a low conversion product of starch, the de value is controlled between 10-20 and the viscosity is high. If the liquefaction control is not good, it will bring many difficulties to the subsequent process, resulting in low yield and poor product quality. To do this, first use α- Amylase liquefies the starch slurry to the de value of 2-5, rapidly raises the temperature to 140 ºC, condenses the protein impurities, lowers the temperature to 88-90 ºC, and then adds enzyme to convert it to the required DE value. Such conversion solution has good filtration properties.

(3) Refining
filtration: the precipitates in the above conversion solution are filtered by a filter press. Generally, diatomite can be used as filter aid to speed up the filtration speed. This process can remove impurities such as fibers, proteins and lipids to obtain clear filtrate.

Decolorization: the filtrate is purified with activated carbon. The amount of activated carbon is about 0.5% of the dry matter of the filtrate. The decolorization ability of activated carbon at different pH values is basically the same in the range of pH 4-6. At lower pH values, the color of decolorized sugar solution increases less when heated, so the pH value of decolorization operation can be adjusted to 4.5-5.0. The decolorization temperature is generally 80 ºC and maintained for 30 minutes.

Dissociation: in order to further improve product quality, remove salts with ion exchange resin.

(4) Evaporation (concentration) in the vacuum evaporation tank, the standard evaporation tank can be used for initial evaporation or directly concentrated to 76% concentrated liquid.

(5) spray drying is a good method to heat the purified maltodextrin evaporating concentrate to 110 degrees by heat exchanger, spray into the drying chamber with a high-pressure pump through the nozzle, contact with hot air at 150-200 degrees Celsius and dry it to moisture content of less than 3%, get white powder, this product is soluble in water and has high diaphaneity.

(6) The finished product can be packaged in double-layer food plastic bags or double-layer kraft paper bags with moisture-proof layers.

The hydrolysis process of maltodextrin makes starch molecules from large to small. In fact, it is a mixture of maltose, fructose and dextrin. Due to the large proportion of dextrin and the relative decrease of glucose value, it has weak sweetness, strong thickening and low fermentation. Therefore, maltodextrin has the following characteristics: it has good solubility and can be dissolved in water, so it can be used as thickener in the beverage to improve the viscosity of the beverage; Low moisture absorption, especially when making powdery and granular solid drinks (including flavor soup), it is not easy to absorb moisture and caking; Reducing sugar is weak, which can reduce browning during food processing; Good fluidity, convenient storage and easy mixing; It has good film forming property and strong foam stability, can give food certain shape and viscosity, and can inhibit crystallization of granulated sugar.
