Potassium sorbate is white to yellowish scaly crystals, crystal particles or crystal powders, odorless or slightly stinky, and easy to absorb moisture and decompose by oxidation and discoloration when exposed to air for a long time. Potassium sorbate is soluble in water, 67.6g/100ml (20 C); 5% salt water, 47.5g/100ml (room temperature); 25% sugar water, 51g/100ml (room temperature). Soluble in propylene glycol, 5.8g/100ml; ethanol, 0.3g/100ml. PH7-8 of 1% potassium sorbate solution.

(1) Good anticorrosion

Potassium sorbate can effectively prolong the storage time of food and maintain the flavor of the original food. Its anticorrosion effect is 5-10 times as good as that of sodium benzoate.

As potassium sorbate is an unsaturated fatty acid (salt), it can be absorbed by the body's metabolic system and quickly decomposed into carbon dioxide and water, without residue in the body.

Potassium sorbate is stable in sealed state, easy to absorb water, oxidize and colour when exposed to humid air. Potassium sorbate has good thermal stability and decomposition temperature is as high as 270 C.

(4) Wide range of applications

At present, it has been widely used in food, beverage, pickles, cosmetics, agricultural products, feed and other industries. From the development trend, its application scope is still expanding.

(5) Potassium sorbate is an acid preservative. It still has good preservative effect in foods close to neutral (PH6.0-6.5). When the preservative effect of benzoic acid (sodium) is higher than PH 4, the effect has been significantly reduced and has a bad taste.

(6) Flexible use

When used, it can be directly added, sprayed, dipped, dried powder spray, and processed on packaging materials.
