Introduction

    Falling number Cereal Amylase Meter is the special instrument for testing the amylase activity in grain, can accurately judge the injury degree of grain germination, widely used in determination of grain, especially wheat and wheat flour, is the necessary instrument for grain storing, flour processing, food processing and other fields of quality inspection

Principle

According to Berhagger's sedimentation value method test the α - Amylase activity index in grain.
Powder grain (such as wheat flour) suspension in the boiling water bath can quickly paste, different amylase activity cause different liquefaction degree of starch of gelatinization, and then different falling speed of mix stick in gelatinization, the falling value shows the difference of Amylase activity, Low value shows high activity.
Falling number is expressed by the seconds needed of mix stick drop a certain height in free falling.
