Lactose is a kind of disaccharide, which is linked by β - D-galactose and β - D-glucose at β - 1,4-position. Molecular formula C12H22O11 (JMOL stereogram), molar mass 342.3 G. There are two end isomers: α - lactose and β - lactose, which can be transformed into each other in aqueous solution. α - lactose is easy to combine with a molecule of crystal water. The sweetness is about one fifth of sucrose, and the solid component of 2-8% in milk is lactose. The intestinal tract of young mammals can secrete lactase to decompose lactose into monosaccharide. The activity of lactase in adult animals, including most humans except Caucasians, is greatly reduced. So drinking milk can produce diarrhea, abdominal distention and other symptoms, known as lactose intolerance. If the adult animals continue to drink milk for a long time (in the early stage, it is better to drink slowly for a few times), it can also stimulate the activity of lactase in the intestine and increase a certain amount. Although the activity and quantity are not as good as those in the early childhood, it can still effectively help to decompose lactose.
