5. Character: Colorless clear crystal or white crystalline powder. The relative density is 2.534 and melting point is 880° C. It soluble in water easily, insoluble in ethanol. It will weathering in dry air and lose crystal water under 100° C. It easily absorbs water to deliquesce in air.

6. Usage: In food processing industry, it is used quality improver, regulator of PH value, chelate agent, emulsifier and binder industry. It also is used in the processing of meat and aquatic product.
