Lipase is an enzyme and belongs to the class of hydrolase. Lipase is produced in the pancreas, mouth, and stomach. It catalyzes the hydrolysis of triglycerides to glycerol and free fatty acids. The body uses lipase to break down fats in food so they can be absorbed in the intestines.Lipases are widely employed to catalyze hydrolysis, alcoholysis, esterification, interesterification, acidolysis and transesterification of carboxylic esters. Their unique characteristics include substrate specificity, stereospecificity,regioselectivity and ability to catalyze a heterogeneous reaction at the interface of water soluble and water insoluble systems.Lipases are used as flavor and aroma constituents in the food industry, to produce valuable oleo chemical species for diesel engines, as additives in cosmetic formulations, to remove the pitch from pulp produced in the paper industry, for the hydrolysis of milk fat in the dairy industry, to remove non-cellulosic impurities from raw cotton before further processing into dyed and finished products, for the drug formulations in the pharmaceutical industry, and to remove subcutaneous fat in the leather industry. Lipases are also used to diagnose pancreatitis in patients. Clinically lipases help a person who has cystic fibrosis, Alzheimer's disease, atherosclerosis and act as a candidate target for cancer prevention and therapy. Lipases are also used to treat obesity in recent years.
Function
1. Lipase can be used to enhance the flavour of cheese products.

4. Lipase can also be used for alcohol to turbidity of slag, improve the quality of bread, improve protein foam, etc.
Appliction
1. Food Industry: The lipase is characterized with emulsifying performance. It can effectively improve quality of all kinds of flour, such as strengthening gluten network and improving its taste, enhancing the stability of the dough and fermenting power,magnifying steam buns/loaf/dough volume, improving the smooth finish and whiteness of the flour products and prolonging product shelf life.
Reference Dosage: 1.0-3.0 g/100 kg of the four.
2. Feed Industry: Add the lipase in feed can release the short chain fatty acids, improve the energy utilization ratio of the fat-like feed raw materials, increase and improve the flavor and fragrance of the feed and increase the appetite of livestock.Meanwhile, it can also has a certain effect in curing the local inflammation of the livestock.
Reference Dosage: 0.1‰-1‰ of the feed.
3. Leather Industry: Lipase is one main composition of leather enzyme preparation and the important material in manufacture of top grade leather. It is widely applied in tanning preparation process such as soaking, soaking in lime process, softening, deliming,degreasing and etc.
Dosage: it can be used in conjunction with protease at 25-55°Cwith PH6-11 according to different process requirements. Generally,
the lipase accounts for 10% of total enzyme preparation.
4. Other industries: Lipase can catalyze lipids hydrolyzation efficiently. It can also be used in dairy food, liquor flavor enhancers, pharmaceutical, cosmetics, detergents, wastewater treatment, pulp and papermaking industries.
