Tartrazine, known as acid yellow, hydrazine yellow. Chemical name is 1-(4- phenyl sulfonate)-4-(4 phenylazo sulfonate)-5-pyrazolinone -3- carboxylic acid trisodium and water-soluble synthetic pigment, present as bright yellow, is a monochrome variety.
It is an azo acid dye, widely used in colorant of food, frozen drinks, jelly, flavor fermented milk, drinks, canned, candy coating. Tartrazine can be used to coloring of food and medicine, because that it owns higher safe degree, basically avirulent, doesn't accumulate in inside body, is discharged from the body in the original form. And a small amount of them can be
metabolized, its metabolite is not toxic for the person. According to the health standards of food additives (GB2760-2011) of China, the maximum usage of food additives is 0.1g/kg for preserved fruit, decorative fruits and vegetables, pickled vegetables,processed nuts, shrimp flavor tablets, colored cakes, drinks, puffs, etc. For flavor fermented milk, condensed milk,
frozen drinks and jelly, maximum dosage is 0.05g/kg.
