Lemon Yellow Edible Pigment
The appearance of edible lemon yellow is orange-yellow powder, slightly soluble in alcohol, and insoluble in other organic solvents. Its scientific name is 3-carboxy-5-hydroxy(p-sulfophenyl)-4-(p-sulfophenylazo)-o-trisocene trisodium, the English name is Tartrazine. Lemon yellow is a kind of artificial pigment, which is a food color that is allowed to be applied in food additives in China. Lemon yellow can be used as a coloring agent for foods and also for coloring pharmaceutical and cosmetic labels.
The safety of tartrazine is relatively high, basically non-toxic, not stored in the body, most of which are excreted in the original form, a small amount can be metabolized, and its metabolites have no toxic effects on humans. The raw materials produced are p-aminobenzenesulfonic acid, tartaric acid and 2-naphthol-6-sulfonic acid, which are also basically non-toxic substances. As early as 1994, it was recognized by the World Food Organization (FAO) and the World Health Organization (WHO). Lemon yellow is widely used in the coloring of frozen drinks, jelly, flavored fermented milk, beverages, canned foods, candy coatings, etc. According to China's "Sanitary Standards for the Use of Food Additives", lemon yellow can be used for fruit juice drinks, carbonated drinks, candies, jellies and other foods, but the dosage is strictly limited. Because long-term or one-time consumption of foods with excessive levels of citrine may cause symptoms such as allergies and diarrhea. When the intake is too large and exceeds the liver load, it will accumulate in the body and cause certain damage to the kidneys and liver.
