Does egg yolk contain lecithin?
Lecithin is found in the yolk of the egg. A large egg contains 126 milligrams of choline, according to the Linus Pauling Institute.
 

How do you get lecithin from egg yolk?
A process for obtaining yolk lecithin from raw yolk which comprises subjecting raw yolk to extraction with liquid dimethyl ether thereby forming an extraction mixture, the weight ratio of liquid dimethyl ether to raw yolk being not less than 2:1, followed by separation of yolk proteins from the extraction mixture and so on.

What makes egg yolk a good emulsifier?
Many proteins in egg yolk can act as emulsifiers because they have some amino acids that repel water and some amino acids that attract water. Mix egg proteins thoroughly with oil and water, and one part of the protein will stick to the water and another part will stick to the oil.

Is lecithin in egg yolk or white?
In an egg, the white is where most of the protein is held, and the yolk holds the fat. Egg yolk is also where the natural emulsifier lecithin is held which is why sourcing it from yolk can be costly for food manufacturers and why many use soy as a source instead.
