It is white crystalline powder. It is air slaking, hydrationloss when heated to 130ºC, 
freely soluble in water.
It's molecular formula is C4H4Na2O5•3H2O/ C4H4Na2O5•H2O/ C4H4Na2O5•1/2H2O 
and molecular weight is 232.06/196.06/187.06. It is an excellent food preservative, 
which can keep food fresh and give it a good taste.
