Properties: grayish brown or light gray powder. Microorganism: Candida lipo lytica. It belongs to fat hydrolases, and protease, amylase are called three major hydrolases. The optimum temperature is 35-37 ºC. Enzyme reaction: triglyceride + H2O = triglyceride + fatty acid anion. It is easy to hydrolyze the primary ester group. Monoglycerides are poor substrates. There are two similar isoenzymes lipase: A and B. The isoelectric point (PI) a is 4.9 and B is 5.0. Absorption coefficient (E1% 280) 13.3. The activator is calcium (Ca2 +).

Purpose: biochemical research. An enzyme that catalyzes the hydrolysis of fats. In industry, it is used in fatty acid production by oil hydrolysis, leather degreasing, detergent industry, etc
